Greek Pastry Instructions
- Heat the oil in a large saucepan over medium heat. Add the onion and cook, stirring, until soft, about 8 minutes. Add the lamb, put on the fire over medium heat and cook, breaking all the pieces, until golden brown, for 5-8 minutes. Add the wine and cook until slightly reduced. - To make the bechamel sauce, put the boiling milk in a saucepan over medium heat. In a separate medium saucepan, melt the butter over medium heat. Pour in the flour and cook for 2 minutes. - In a medium bowl, stir in the yolks. Stirring constantly, slowly pour a quarter of the milk mixture from Step 2 into the eggs. Stir the egg mixture back into the pot. Add 1 cup pecorino roman cheese. Add the yogurt. Season with salt and pepper.
- Preheat oven to 375 degrees Fahrenheit.
- Boil a pot of salted water. Cook the pasta al dente until packaged according to the instructions (usually about 8 minutes). Drain and mix with the lamb sauce. Adjust to taste the salt and pepper.
- Transfer to a large baking dish. Make sure the dish mix is at least 4-5 inches deep. (I used 2 small rectangular oven pans so I could eat one and store one later). Add the bechamel sauce, and then the remaining 1 cup of cheese. Place in the oven until caramelized, about 45 minutes. Garnish with parsley. Serve.
