Instructions to make to make Chicken Hakka Noodles

  1. Marinate the 100g raw chicken chunks in salt, pepper, 1 tbsp soy sauce & 1 tbsp chilli sauce for 30 mins. Then cook them in some hot oil and keep them aside.
  2. Boil the 125g egg hakka noodles (preferably in chicken broth) till they’re about 80% done and then let them drain in a colander.
  3. Add 2 tbsp oil & 1 tbsp butter in a wok and then add ½ tbsp garlic to the wok. Cook for 2 mins.
  4. Add ½ cup onions, 3 finely chopped green chillies, white portions of ½ bulb of spring onions and cook for about a minute.
  5. Add all the remaining veggies – 1 tbsp carrots, 1 tbsp cabbage and 1 tbsp capsicum and stir nicely. Cook for 2 mins.
  6. Add 1 tbsp soy sauce, 1 tbsp red chilli sauce & 1 tsp Vinegar along with the pre-cooked chicken to the wok and mix everything together. Cook for a minute.
  7. Now add in your boiled Hakka egg noodles and season with some salt and pepper. Toss nicely without breaking any noodles. Cook for 2 mins.
  8. Garnish with 2 tbsp spring onion greens and 2 long cut green chillies.
